A Nice Fishy Dishy


We had a surprise gift yesterday - a trio of salmon from our Hertfordshire family. There was smoked salmon, gravalax and two luscious Oak Roast steaks - crying out to be eaten. I wasn't sure how to do them; they seemed to be sealed in a buttery juice, sprinkled with cracked pepper like the bottom two in the picture. I decided to do them en papilotte in the Aga and wrapped then in a foil envelope for 20 minutes. We had them with baked potato, courgettes and sprouts a la Eryl ( side bar) and lemon. A success!

    Salmon is very good for you, dear, and the dinner sounds lovely. Alas, you've nothing left for the New Year's Eve celebration unless its a late-night lox sandwich with your champers. Too bad you've lost patience.

  8. We had hot-smoked salmon last night. I did them with bulgar wheat, often do them in a creamy sauce with pasta, or else just plain, cold, with a salad. Lovely hot or cold.

    Z: I like cold with scrambled egg. It really is a great stand by.

    Scarlet: it grieves me when one thinks of the money wasted buying unwanted presents when there is smoked salmon at al.

  12. Love smoked salmon and yet haven't had any this festive season. Perhaps I'll sneak some onto the shopping list,

    Bob's favourite meal is hot-smoked salmon quiche, which is rather like a pie version of smoked salmon and scrambled eggs.

  14. It all sounds quite yummy....Though I don't know what an "AGA" is...It is funny. We speak the saame language but often there are words in your posts I am totally unfamiliar with...Courgette's??? LOL!

    I love Smoked Salmos---The Nova SCotia type...not so salty!

  17. Naomi: an Aga is a large cooking stove that stay hot all the time - unless you let it out. Usually it heats the water and does the cooking.

    A courgette is a vegetable that looks like a small cucumber or marrow.

    Kim: I really don't deserve it but it will be nice to have one once more. Many thanks:)
